Fat-Free Oatmeal Raisin Bars

cup unsweetened applesauce
cup firmly packed brown sugar
cup granulated sugar
2 egg whites
tsp vanilla
cups all-purpose flour
tsp baking soda
tsp cinnamon
tsp salt
1 cups "old-fashioned" oats
cup raisins

Preheat oven to 350F

Combine applesauce and sugars. (Don't try to get sugar granules to dissolve.)

Add egg whites and vanilla and mix lightly.

Combine flour, soda, cinnamon, and salt; add to sugar mixture and mix lightly.

Stir in oats and raisins; mix well.

Rub a cold stick of butter over the bottom and sides of a 9x9-inch metal baking pan. (Adds insignificant amount of fat).

Bake 25-30 minutes. Turn out as soon as pan is cool enough to handle and finish cooling on wire rack. Cut into 16 squares.
